Egusi soup has a rich, earthy flavor from the melon seeds, with a savory taste boosted by meat, fish, and leafy vegetables. The texture is thick and slightly grainy, making it perfect for scooping up with soft, stretchy eba. The combination of the thick soup and the smooth eba makes each bite comforting and satisfying.

Preparing egusi requires some patience and skill. You need to grind the melon seeds, fry or boil them with palm oil, add meat or fish, and season with crayfish, pepper, and vegetables. Eba is simpler; you just pour hot water over garri and stir it until it’s smooth. The ingredients are easy to find in any Nigerian market, but the process of making egusi just right takes some experience.
