Flavors and Textures: How would you describe the flavors and textures of your favorite food? What about these flavors and textures make it one of your favorite things to eat?
Abacha, or Nigerian native salad, has a unique mix of flavors—it's tangy, a bit spicy, and slightly salty. The texture is crunchy from the dried cassava flakes, mixed with soft ugba (oil bean) and vegetables. What makes it special for me is the balance of the flavors and the crunchy feeling in every bite, especially when topped with fish or kpomo.
Meal Prep: How is your favorite food prepared? Is it easy to source and prepare, or is does it require skills or patience?
Preparing abacha takes a bit of skill, but it’s not too hard. You need to soak the cassava flakes in cold water to soften them, then mix them with palm oil, crayfish, pepper, and seasonings. Adding onions, garden eggs, and ugba gives it extra taste and texture. It’s easy to find the ingredients in the market, but getting the flavor just right takes some practice.

bacha is a traditional Igbo dish, often served at village meetings, gatherings, or as a special snack. It’s more than just food; it represents the rich culture of the Igbo people. During festivals or community events, abacha is served to guests as a sign of hospitality. It reminds me of home and the way food brings people together, especially during special occasions.
